New Forest Butchery Courses.

The courses take place in the butchers shop, based in Sway in the heart of the New Forest.

All courses end with drinks and nibbles, giving you a chance to talk about the evening with the other students.

These courses are ideal for food enthusiasts who would like to gain a more indepth knowledge of butchery and make an ideal gift.

Course 1 'The Pig'

A course explaining the various cuts of pork and their uses. Each student has the opportunity to cut a side of pork into a variety of joints. Learn how to debone, prepare and roll a joint of pork.

£75 for this 2.5 hour course including a cut of meat to take home to the cost value of £20

Course 2 'The Lamb'

A course explaining the various cuts of lamb and their uses. Each student has the opportunity to cut a whole lamb into a variety of joints. Learn how to prepare a variety of joints.

£75 for this 2.5 hour course including a cut of meat to take home to the cost value of £20.

Course 3 'Chicken'

During the course you will learn many of the skills used in preparing chicken. Whether for the BBQ or a dinner party you will learn how to portion, bone a whole bird, crown and spatchcock...

£75 for this 2.5 hour course including cuts of chicken to take home to the cost value of £20.

Course 4 'Sausage Making'

Learn how to make sausages with the award winning sausage maker David West. From seasoning to hand linking you will be shown the various stages to create the perfect sausage. A hands on course everyone will have the opportunity to try every stage of the sausage making process.

£75 for this 2.5 hour course including your handmade sausages to take home to the cost value of £20.

Course 5 'Game'

In the Autumn we will be running a seasonal game course. From skinning and portioning a rabbit, preparing a pheasant and jointing a side of venison. An interesting course using locally sourced game from the New Forest.

£80 for this 2.5 hour course including £20 at cost of game to take home.
