Beef Roasting Guide

TO ROAST A JOINT OF BEEF

Bring the beef back to room temperature if necessary. Preheat the oven to 240C/475F/Gas 9 or as high as your oven will go. Weigh your joint of beef.
Rub the outside of the beef with soft beef dripping or olive oil and season well with salt and pepper.
Place the beef in a roasting tin and roast for 15 minutes until nicely browned all over. Then reduce the oven temperature to 190C/375F/Gas 5 and continue to roast for 12-13 minutes per 500g for rare, 17-18 minutes per 500g for medium or 22-24 minutes per 500g for well-done.
Remove the beef from the oven, lift onto a board and cover with foil. Leave to rest for 20-30 minutes.
Pour away the excess fat from the roasting tin and use the caramelised roasting juices for making the gravy.
